Lemon Tart 3 whole eggs
3 egg yolks
1 cup sugar
3/4 cup lemon juice
2 Tbls. Lemon zest
pinch salt
6 Tbls. butter

Whisk eggs, yolks, sugar, lemon juice, lemon zest and salt togather in a stainless saucepan. Add the butter and cook over medium-low heat, stirring constantly. Cook until filling thickens slightly but is pourable. Strain filling through a fine mesh strainer into a partially baked crust. Baket tart at 325 degrees until filling is just set, about 10 minutes. Cool tart before transferring to serving dish.
